IN THE LATE 1970'S, ONE YOUNG TEENAGER GOT A JOB IN A BUSY RESTAURANT IN HIS HOMETOWN OF HUNTINGTON BEACH, CA. 
HE WORKED A FEW POSITIONS IN THE RESTAURANT, BUT, HIS LOVE WAS ALWAYS COOKING. 
IN THE YEARS HE WORKED THERE, HE LEARNED TO LOVE THE BUSINESS OF SERVING THE PUBLIC.
LITTLE DID HE KNOW THAT HIS STINT AT THE RESTAURANT WAS JUST A WAY TO PUT THROUGH THE NEARBY FIRE ACADEMY. THERE, HE LEARNED TO SERVE THE PUBLIC IN A DIFFERENT WAY. GRADUATING FROM THE FIRE ACADEMY IN 1983, HE WAS THEN HIRED BY THE PALM SPRINGS (CA) FIRE DEPARTMENT IN 1984. 

LIKE MOST ROOKIES, HE WAS QUICKLY ASSIGNED TO KITCHEN DETAIL. USING THE KITCHEN SKILLS HE LEARNED IN THE RESTAURANT, HE IMMEDIATELY GAINED THE TRUST OF EVEN THE SALTIEST OF VETERANS IN THE STATION. AT LEAST AS FAR AS MEALS WERE CONCERNED. 

KNOWING HIS LOVE FOR THE RESTAURANT BUSINESS STILL LINGERED, HE KNEW ONE DAY HE'D OWN A RESTAURANT. THAT OPPORTUNITY CAME TO LIFE ONE DAY WHILE HE WAS FLOATING IN THE POOL, SIPPING A MARGARITA WITH HIS GIRLFRIEND, JAYME. WHILE THE FIREMAN AND JAYME FLOATED, AND DRANK, THEY SHARED COMMON DREAMS OF BEING RESTAURATEURS. IN FACT, THEY MET IN A GREAT LITTLE PUB AS JAYME SERVED THE FIREMEN AND HIS FRIENDS GOOD FOOD AND COLD BEERS. THEY QUICKLY DISCOVERED THEY'D BE A GOOD TEAM IN BUSINESS AS WELL AS IN LIFE.

JAYME SPENT MOST OF HER ADULT LIFE WORKING IN THE HOSPITALITY BUSINESS. FROM BARTENDING TO BOOKKEEPING, TO CONTROLLING ENTIRE HOTELS. SHE HAS WORKED EVERY JOB IN A RESTAURANT, BUT, COOKING. THAT'S THE FIREMANS JOB. 
WHATEVER HER DUTIES WERE, JAYME QUICKLY GATHERED A FOLLOWING OF REGULARS WHO CAME BACK TIME AND AGAIN FOR GOOD SERVICE AND A HAPPY FACE. YOU'VE PROBABLY GUESSED BY NOW THAT SHE'S THE BRAINS OF THIS PLACE. 

AFTER DISCUSSING GOALS AND DREAMS, JAYME AND THE FIREMAN WERE CONFIDENT THAT THEY COULD FILL HUNGRY BELLIES FULL OF GREAT FOOD. THEY PURCHASED A VACANT RESTAURANT IN TEH SUMMER OF 2001. THEY AND LOTS OF THEIR FRIENDS REMODELED THE PLACE AND OFFICIALLY OPENED THEIR DOORS ON NOVEMBER 24, 2001. 

WELL, HERE WE ARE TODAY. AS YOU LOOK AROUND, YOU'LL SEE MANY RARE AND AUTHENTIC "FIRETIQUES". 99% OF THE ITMES DISPLAYED ARE REAL AND WERE ONCE USED BY REAL FIREFIGHTERS. SOME AS FAR BACK AS THE 1800'S. DISPLAYING THE TRUE BROTHERHOOD OF FIREFIGHTERS, MANY OF THE RARE AND VERY EXPENSIVE ITEMS WERE GENEROUSLY LOANED FOR DISPLAY BY FELLOW FIREFIGHTERS, JUST TO HELP A BROTHER OUT. 

HARDLY A DAY WILL GO BY WHERE YOU WON'T SEE EITHER THE FIREMAN OR JAYME WORKING. 
THE MENU CAN BE BEST DESCRIBED AS "FIREMAN FRIENDLY". 
FIREMAN FRIENDLY FOOD IS WHAT WE ALL LIKE. FOOD THAT IS CASUAL, GREAT TASTING AND AFFORDABLE. YOU SEE, FIREMAN LOVE EXCELLENT FOOD THAT THEY DON'T HAVE TO PAY A LOT FOR. TOO MANY MEALS HAVE BEEN LEFT ON THE KITCHEN TABLE AS THE FIREMEN ANSWERED EMERGENCY CALLS. 

USING QUALITY INGREDIENTS, HOMEMADE SOUPS AND SAUCES, WE TAKE GREAT PRIDE IN FIREHOUSE COMFORT FOOD, FROM OUR FIREHOUSE DERIVED CHILE TO OUR NOW WORLD FAMOUS BABY BACK RIBS. 

DON'T HESITATE TO BRING THE KIDS EITHER. WE HAVE A GREAT KIDS MENU THAT THEY'LL BE SURE TO EAT FROM . 

YOU MAY EVEN NOTICE SOME ON-DUTY FIREFIGHTERS AND POLICE OFFICERS ENJOYING A MEAL, MANY TIMES INTERRUPTED BY EMERGENCY CALLS.
